Recipe: 2014 first csa share

I thought about preparing a long list of various recipes for everyone to try, but I decided to share my top 3 favorite recipes for this weeks share veggies. These are my staple recipes, and i have cooked each of these dozens of times.

1. Chinese Cabbage Cole Slaw:

-Make coleslaw dressing: 1/4 cup mayo, 1 tablespoons apple cider vinegar, tablespoon or two of sugar, salt and pepper (mix all together in bowl to taste)

– Toss chopped chinese cabbage (1/4 to half a head) ( cut into strips, stems and leaves), with thinly sliced radishes, chopped scallions, and coleslaw dressing. Add other veggies as well.

 

2. Sauteed Komatsuna with Garlic:

-Mince garlic, and chop  komatsuna into strips (leaves and stems)

-Heat hot pan with oil, add garlic and saute for 2 minutes.

-Add stems of komatsuna and cook for 3 minutes.

-Add soy sauce or braggs liquid aminos, and rice wine vinegar to taste

-Cook until done : as you prefer.

(my ratio is about 1 part vinegar to 3 parts soy sauce)

 

3. Soup with soy, garlic, ginger and greens: 

-If you have a nice vegetable or chicken stock available, a simple Asian green soup is always very easy.

-Saute, chopped garlic, ginger and onions. Cook for 3-4 minutes. Add stems of Asian greens. (or use dried ginger). Cook for 2 minutes.

-Add stock, soy sauce, leaves of greens, salt and pepper. to taste.

-Also works well with dumplings or rice stick noodles, add thinly sliced raw radishes, turnips and scallions at the end for some texture and more flavor.
