Recipe: Quick Pickles

Thanks CSA member Andrea Hankins for the following recipe.  Delicious!

I always make these when I have too many cucumbers but no time to can.

6 small cucumbers cut into spears or chips
2 cups cold water
1/3 cup white wine vinegar
1 T salt
2 tsp sugar
5 whole peppercorns
fresh ground pepper
1-2 cloves garlic sliced
1 small bunch dill
1 small onion sliced

Combine the water, vinegar, salt, and sugar in a small bowl and stir until dissolved. Add liquid and remaining ingredients into a gallon size Ziploc bag and put in the refrigerator. Turn several time a day. Pickles are ready after 2 days.
