Quinoa Salad


1 c Quinoa

2 c H2O

1 Cucumber

1 Red pepper

1 Red onion


1 c Raisins


Parsley and other herbs to taste

3-4 Tbsp Lemon Juice

5-6 Tbsp Olive oil

Salt and pepper


Cook quinoa in water for 15 minutes, allow to cool before mixing with other ingredients.  Remove edamame from shells and place in large mixing bowl.  Finely chop red pepper, cucumber, onion, garlic, herbs and place in mixing bowl with edamame.  Add olive oil, lemon juice, and raisins and mix well.  Season with salt and pepper mix well.  Flavors develop after refrigeration.
