Recipe: Kohlrabi Soup

Kohlrabi Soup


1 – 2 Kohlrabi

1-2 sweet onions

2-3 cups chicken/veggie stock


salt and pepper



Peel kohlrabi and cut into 1/2 inch cubes.  Chop onion into small pieces.   Heat large sauce pan with 1-2 Tbsp butter/oil until hot.  Place onion into pan, cook 1 minute.  Add kohlrabi.  Cook five minutes.  Stir frequently.  Add stock, cook until veggies are tender [usually 8-10 minutes for me].  Blend soup in food processor or use immersion blender.  Once smooth lower heat, add cream.  Cook until smooth and thick.  Season.
