Cream of Broccoli Soup
This is a great soup recipe that Paige and I really enjoy.
2 Tbsp Butter
1 small white onion or two shallots
1 bunch/head broccoli
1 large potato
2 cups vegetable/chicken stock
2 cups milk
Salt and pepper to taste
Melt butter in saucepan. Cook onion/shallots in butter until soft.
Add broccoli and potato. Cover and cook five minutes on low. Add
two cups of chicken stock. Bring to boil then simmer for twenty minutes.
Turn burner off and take mixture to food processor and purée. Clean pan
and return to pan. Add milk and nutmeg. Season with salt and pepper.
