Quick Salad Dressings

We love to eat quick salads.   I’m going to share our most frequently used dressings.  I try to not buy dressings in the store.  It is easier and cheaper to make your own.  The Sesame dressing is great on the bok choy and Asian greens.  The balsamic is good on just about anything.   And Chef Hilary’s Bacon dressing is great on our head lettuce and spinach.

Sesame dressing:


2 Tbsp Sesame oil

2-3 Tbsp Soy sauce

1 Tbsp Sesame or flax seeds

Green garlic or chopped onion flower

Ginger, chili paste, chilies, honey to taste [all optional]

1/3 cup of rice vinegar

Salt and pepper to taste

Process:  I put all ingredients except sesame seeds and oil into food processor and blend until mixed.  I slowly add the oil and once it’s finished I mix in the sesame seeds.

Balsamic Dressing:


2-4 Tbsp Balsamic vinegar

1 Tbsp Dijon mustard

1 clove Garlic, green garlic, or chopped onion flower

1/4 to 1/2 c Olive oil

Salt and pepper to taste


Add all but oil to food processor and mix.  Slowly drizzle in oil.

Chef Hilary’s Bacon Vinaigrette:

Yield Three Cups

1/2# Bacon, Chopped, any bacon will work.

1/2 Cup Olive Oil

1/2 Onion, Chopped

1 Stalk Celery, Chopped

1/4 Cup Brown Sugar

1/2 Cup Sherry Vinegar

2 TBS Worcestershire Sauce

Salt and Pepper


Cook bacon over medium heat till crispy
Remove bacon leaving fat behind in the pan
Set bacon aside for garnish in the salad
Add olive oil to pan
Add onion and celery and cook till tender
Add brown sugar, sherry vinegar and Worcestershire sauce
Season with salt and pepper
